Germination alters the microstructure, in vitro protein digestibility, α‐glucosidase and dipeptidyl peptidase‐IV inhibitory activities of bioaccessible fraction of pigeon pea ( <scp> <i>Cajanus cajan</i> </scp> ) seeds

Germination was investigated as a bioprocess for enhancing the digestibility and bioactivity of pigeon pea (Cajanus cajan). Pigeon seeds were germinated 0, 4, 24 48 h. Electrophoresis revealed that 7S vicilin subunits most abundant proteins in control seeds. FTIR showed loss β sheet gain α-helix contents, microscopy cell wall degradation decreased seed protein yield due to partial hydrolysis proteins. After vitro digestion, 48-h germination increased digestibility-corrected amino acid score flour isolated protein. also enhanced inhibitory activity digesta against α-glucosidase but not dipeptidyl peptidase IV. Taken together, could be used enhance nutritional quality towards improving its future utilization novel healthy food mitigating insecurity.
